Wild Blueberry & Chocolate Mousse

Get your bake on this weekend with this smokin' mousse. Your tastebuds will be tantalised with its delicious flavour and creamy, chocolatey texture (using only gluten-free, vegan & nut-free ingredients!)

Serves: 1

Ingredients

For the mousse:

  • 1/2 large ripe avocado
  • 1 x 20ml tablespoon Pureharvest Coco2 Original Spread
  • 1 x 20ml tablespoon raw cacao powder
  • 1 x 10g sachet Blackmores Wild Blueberry Superfood Powder
  • 1/4 teaspoon pure vanilla extract
  • Pinch of sea salt

Toppings:

  • Fresh or frozen blueberries
  • Coconut flakes
  • 1 square of dark (85% or 90% cocoa) chocolate, chopped

Method

  1. Blend all of the mousse ingredients together in a food processor or using a stick blender until smooth.
  2. To serve, spoon into a bowl and top with blueberries, coconut flakes and chopped chocolate.
  3. Store in the fridge if there are any leftovers.
