This delicious vegan salad recipe was shared with us by the amazing Gemma Davis AKA The Compassionate Road. It is the perfect salad for when you are feeling like a light dinner or when you are pressed for time because it is so quick and easy.
1 cup brown lentils, cooked
1 peach, chopped
2-3 radishes, sliced
1/2 cup basil, picked
3 Tablespoons olive oil
1-2 teaspoons of dried herbs such as thyme, rosemary, oregano
Mix the salt and dried herbs into the lentils. Mix the rest of the ingredients together and drizzle the olive oil over the top.
