Yes, I’m one of “those” people who likes to get up long before the rest of the world (although, in the colder months, you can still find me tucked under the covers at 6am scrolling through my Instagram feed ;)
I’m big on cold pressed juice and Zingy, Zesty Carrot Juice is my current favourite. I juice 5 or 6 carrots, 2 Granny Smith apples along with a small thumb of ginger and some lemon juice before I head off to get my “zen on” with some gentle yoga and meditation before breakfast.
In my humble opinion, breakfast time is the funnest time of day! I love chia pudding and have created an entire chia pudding “hall of fame” with an A-Z library of chia pudding recipes. At the moment I’m crushing on my Blueberry Goji Chia Pudding (you can find the recipe below)
I like to spend my mornings online with the fabulous women in Ditch the Diet Online Bootcamp so mid-morning is smoothie snack time! I dieted and deprived myself for so many years that my number one goal is to make sure I never go hungry again and my Banana Breakfast Smoothie is the yummiest way to do that. I use 1 cup of homemade almond milk with ½ cup homemade granola (depending on how hungry you are, you can leave this out), 1 frozen banana, 2 teaspoons of flax seeds, ½ cup plain greek yoghurt and a teaspoon of honey.
Thanks to my mid-morning smoothie, I’ll often keep lunch nice and light. Today it was my Superwoman Bruschetta on toasted gluten free bread (because nobody likes a bloated belly). I’ll often include a few handfuls of raw nuts or roasted nuts or vegetable sticks with nut butter (can you see a pattern emerging ;) Mainly because nuts have all those delicious, healthy oils that are sooo good for you (plus, for so many years we were told that “fat makes you fat” so I deprived myself of nuts, but now that we know that was never true, nuts make a daily appearance in my diet). After lunch, it’s back to the office to work on my eBooks Drink Yourself Slim and Five Minute Fat Loss Secrets (so much fun!)
When I was lost in dieting Boogie Wonderland, the mid afternoon sugar cravings were the hardest thing to beat. These days things are a little bit different for me. Since completing the last round of The Big Sugar Detox, I take some time every afternoon to stretch, enjoy a cup of green tea and indulge in a sweet (yet free from refined sugar nasties) treat. Today is was Superfood Bliss Balls.
Dinner time is always fast and fresh. I like to prepare my meals in advance so I’m not cooking from scratch everyday. Tonight it was Quinoa and Broccoli Salad. If I still feel like a little something sweet after dinner (and let’s face it, who doesn’t?) I indulge in a cup of green tea with fresh fruit slices and a drizzle of Salted Caramel Sauce… yum!
Recipe: Blueberry Goji Chia Pudding
- ¼ cup chia seeds
- 1 cup coconut milk
- 1 vanilla bean, seeds only
- ½ cup frozen blueberries, defrosted
- 1 tablespoon rice malt syrup
- 1 tablespoon shredded coconut
- 1 tablespoon goji berries
In a large bowl, crush blueberries with a fork then add coconut milk, chia, vanilla, goji berries and rice malt syrup and whisk until combined (gently agitate the mixture until all liquid is absorbed, approximately 3-4 minutes). Top with shredded coconut, cover and place in the fridge overnight.
