Lentil and coconut soup with homemade pesto

Soup Recipe

Ingredients

  • 1 sachet of Hart and Soul coconut and lentil soup
  • Big dob of homemade pesto (Recipe below)
  • Freshly cracked black pepper
  • Drizzle of Extra Virgin Olive oil

Method

  1. Heat up the Hart and Soul soup pouch as per directions
  2. Transfer soup to a bowl and top with a big dollop of pesto
  3. Add pepper and olive oil to taste

 

Pesto Recipe

Ingredients

  • 1/3 cup of toasted pine nuts (walnuts are also nice)
  • 1/2 cup of extra virgin olive oil
  • Good shake of freshly cracked pepper
  • 2 tbs of lemon juice
  • 1/2 tsp of celtic salt
  • 2 big bunches of fresh basil
  • 1 small clove of garlic

Method

  1. Wash and let the basil dry slightly
  2. Toast the pine nuts
  3. Pulse in a small food processor
  4. Store in a jar with olive oil on top
