Healthy Cheese Platter

A healthy platter & a delicious beetroot hummus perfect for a Christmas party and to share with friends and family. Platters are a great option at Christmas time because there will always be something for everyone no matter their dietary requirements!

Ingredients:

  • 1 can chickpeas
  • 2 cooked beetroots
  • 2 tbs tahini
  • ½ lemon, juiced
  • 2 cloves of garlic
  • Generous pinch sea salt
  • 2-3 tbsp water, to thin

Method:

Combine eggplant chickpeas, beetroot, tahini, lemon juice, garlic, salt, pepper and water in a food processor or blender and process until smooth and creamy.

Cheese platter ingredients:

  • Rockmelon
  • Blueberries
  • Kalamata olives
  • Capsicum
  • Coriander
  • Walnuts
  • Baby cukes
  • Preferred cheese
  • Green beans
  • Mary’s Gone Crackers
  • Beetroot hummus, to serve
