Coconut Pumpkin Dip with Beetroot Chips

Hosting a dinner party and don't have much time? Whip up this quick an easy pumpkin dip, sure to be a hit.

Ingredients

  • 2 cups of pumpkin, diced
  • 60g coconut pieces - I used Absolute Organic Organic Dried Coconut from my Goodness Me Box
  • Beetroot Chips to serve

Method

  1. Steam pumpkin until cooked through.
  2. Place in bowl with coconut pieces & allow to cool.
  3. Blend in high speed blender & blend until creamy consistency
  4. Serve with beetroot chips
