Nuts are the perfect ingredient to incorporate into desserts for when you feel like something sweet but want it be good for you; Their healthy fat and protein content makes for a more balanced, satisfying dessert that’s not all based on sugar. These recipes are mostly super simple – Just use whatever nuts and nut spreads are in your pantry.
1) Choose Your Favourite Flavour Truffles
I love this recipe because you change it up each time, or stick to a flavour you really like.
- ½ Cup of your favourite nut butter (I use Mayver’s Original Super Spread for these because it has a bit of everything)
- 2/3 Cup Medjool dates, washed and pitted
- 4 Tablespoons of your favourite raw nuts (Cashews or almonds work well)
- Add all the ingredients to a strong blender (I use an Omniblend) and blend on medium-high until ingredients are evenly combined into a sticky, dough-like mixture; You may need to add 1 or 2 TBS of water to get everything moving.
- Using your hands, shape mixture into truffle sized balls.
- On a plate, roll each truffle in desiccated coconut or sesame seeds to make them look pretty.
- Cover and pop in the fridge for an hour to set; Store in the freezer for a firmer texture. These will last for a couple of weeks in the fridge (if they’re not all gone in a day!)
2) Banana ‘Ice Cream’ Sandwiches
A great way to use up overripe bananas: Simply slice a banana into coin-size pieces, spreading a little nut butter onto one side of half of the pieces; Top each of these with a remaining banana coin to form little sandwiches. Freeze on a baking paper-lined tray or container for at least 2 hours.
Insert a little toothpick into each sandwich to serve.
3) Super Simple Mayver’s Fudge
Serves 12. Prep time: 5 minutes!
- 1 Cup of your favourite Mayver's spread
- 1/4 Cup coconut oil
- 1 Tablespoon raw honey (or sweetener of choice)
- 1/4 teaspoon Himalayan salt
- Optional extras for crunch: Goji berries, cacao nibs, pumpkin seeds, activated buckwheat, bee pollen, chia seeds
- Optional superfood additions: Maca, spirulina, lacuma etc
Mix all ingredients together. Pour into a container and place in freezer for at least 20 minutes.
Remove from freezer, slice and enjoy!
4) Choc-Peanut Butter Mug Cake Surprise
I’m a big fan of sharing dessert – Split this between two and you have a perfectly sized, portion-controlled dessert that’s wholesome too.
- 1 tsp coconut oil
- 1 egg, whisked
- ¼ Cup almond or hazelnut meal
- 1 teaspoon 100% cacao/cocoa powder
- 1 teaspoon coconut sugar (or 2-3 drops stevia for a sugar free option)
- ½ teaspoon baking powder
- 2 teaspoon natural peanut butter
- In a small, deep bowl, combine coconut oil and egg.
- Add remaining ingredients to oil and egg mixture, except the peanut butter. Mix well.
- Pour half of the mixture into a tall mug and place the 2 tsp of peanut butter on top (don’t mix this in). Pour remaining batter on top.
- Microwave in the mug for 1 minute, or until top of muffin is cooked through. Leave to cool for a couple minutes, then place mug upside on a plate – It should slide right out.
- Cut in half and enjoy with a friend!
5) The Perfect Date
A great last minute dessert that’s always a hit with health-conscious guests: Plump, rich Medjool dates, pitted and each stuffed with a tsp almond butter and a sprinkle of cinnamon (I like Baker’s cinnamon from the health food store because it has a sweeter flavour).
Pop in the fridge until served – A melt-in your-mouth, healthy take on sticky date!
